Sweet Potato Soup

Ingredients for the Culinary School Sweet Potato Soup Recipes by Mix'n Match Menus

Serves 4
  • 30 g/ 1 oz butter
  • 1 large onion, chopped
  • 3 large carrots, chopped
  • 1 large sweet potato, chopped
  • 4 cups / 1 liter / 1 3/4 pt chicken or vegetable stock
  • 3/4 cup / 185 g / 6 oz sour cream
  • 2 tablespoons chopped fresh dill

  • 1) Melt butter in a saucepan over a medium heat. Add onion, carrots and sweet potato. Cook for 5 minutes.
  • 2) Stir in stock. Bring to boil. Simmer for 30 minutes. Cool slightly.
  • 3) Puree soup. Return soup to a clean saucepan. Stir in sour cream. Cook, without boiling and stirring constantly, for 5 minutes or until soup is hot. Stir in dill. Serve immediately.
