  • Oven temp: 200 degrees C, 400 degrees F, Gas 6
  • 375 g / 12 oz shortcrust pastry
  • whipped cream (double) or ice cream
  • Strawberry Filling
  • 30 g / 1 oz butter
  • 3 cooking apples, cored, peeled and chopped
  • 2 teaspoons lemon juice
  • 500 g / 1 lb small strawberries, hulled
  • 2 tablespoons caster sugar
  • 1 teaspoon nutmeg

  • 1) Filling: Melt butter in a frying pan over a high heat. Add apples and lemon juice. Cook, stirring for 4 - 5 minutes or until apples are tender. Remove from heat. Add strawberries. Toss. Cool completely. Stir in sugar and nutmeg.
  • 2) Roll out pastry to fit a 23 cm / 9 in fluted flan tin with a removable base. Bake blind for 10 - 15 minutes. Remove rice and paper. Bake for 10 minutes longer or until pastry is golden. Cool completely
  • 3) Spoon filling into cold pastry case. Serve immediately with whipped cream or ice cream, if you wish.
